I was never so happy to see a new year as 2021. I hope everyone is having a great January so far.
This winter has been a little strange, not as much snow and not as cold as usual. Maybe we are in for a rainy spring. Let’s hope so.
I was thinking about Super Bowl Sunday and some appetizers to make. Found a couple of easy recipes that you can throw together even if you can’t have a get-together this year. One is a dip and the other is a cracker with bacon.
Give them a try, hang in there, wear a mask and get a vaccine when you can.
5 Minute Million Dollar Dip
5 green onions, chopped
8 ounces cheddar cheese, shredded
1 1/2 cups mayonnaise
1/2 cup bacon, cooked and chopped
1/2 cup slivered almonds
Add green onions, cheddar cheese, mayonnaise, bacon and almonds in a bowl. Mix to combine and chill for at least two hours. Serve with your favorite crackers. I found this recipe on the website:therecipecritic.com.
Bacon Crackers
1 package butter crackers
8-10 slices bacon, cut into sections
1 cup brown sugar
Preheat the oven to 350 degrees. Line a sheet pan with parchment paper or foil. Place a cooling rack over the lined pan. Lay out crackers evenly on a rack. Place one piece of bacon on each cracker. Top with brown sugar, spreading evenly. Bake 15 to 20 minutes, or until brown sugar melts and bubbles. Cool and enjoy. I like to spread Dijon mustard over the bacon before you add the brown sugar.
